Along with local wines, the complimentary minibars are refreshed daily with Tasmanian artisan vodka, gin and whiskey, chocolate truffles and spiced nuts; there are also Nespresso machines and Jing loose leaf teas. Marble bathrooms have deep baths, double walk-in showers, underfloor heating and lush La Gala products, including fragrant mineral salts and milk baths for soaking. But it’s really all about the sublime cinematic views from their large picture windows.

The Private Pavilions offer the highest standard of luxury accommodation of all the suites at Saffire Freycinet in Australia. It features a separate bedroom and dining area with a kitchen, allowing guests to choose a dinner in suite option with the chef. A plunge pool takes center stage in the extended private courtyard. The premium mini bar offers French champagne and is complimentary during a stay. The Private Pavilions are 140 square meters and feature Saffire’s bespoke king bed, LCD screen TV and Blu-ray DVD, Geneva iPod music system, deck with outdoor lounge chairs, private courtyard with plunge pool, private suite kitchen, WI-FI internet access, espresso machine, dining area, spacious living room with separate bedroom area, as well as double shower and bath.
The hotel’s restaurant, Palate, is open only to guests and is widely considered to be Australia’s most exclusive dining room, with its Modern Australian cooking often making food writers’ best-lists (and making non-guests very envious). Degustation dining is encouraged, but you can also mix and match across the menu, or order a Cape Grim eye fillet or simple pan-fried fish, if its comfort food you’re craving. In fact, the chef takes requests. The sommelier Justin is equally committed to finding what will delight or surprise, according to the guest’s mood. Lunch can be had here too, or fresh, healthy salads are served in the lounge.
Palate Restaurant provides tailor made gourmet moments that enhance the genuine flavors of home grown produce. Multi course menus matched with outstanding local wines are designed around what is available, fresh from the water or paddock that day and as such, the restaurant publishes new menus for each day.
