Hotel Byblos Voiles De Saint

Set in the heart of Saint-Tropez, just a few minutes from the magnificent beaches, stands the Byblos Saint-Tropez Palace Hotel. Built as a Mediterranean-style village, you will be surrounded by small courtyards and patios immersed in the fragrances of bougainvillea and lavender, cool havens with all the colors of the South of France. Since its opening in 1967, Hotel Byblos Saint-Tropez has always been decidedly hip. Guests wind their way around the resort to find dining and entertainment, including the Sisley spa; the famed Les Caves du Roy nightclub; the Cucina restaurant by Alain Ducasse; the B., a casual dining area next to the waterfall-fed pool; Arcadia restaurant by the pool, the new gourmet hot spot in town; and Byblos Beach on Pampelonne bay. None of the 40 rooms and 51 suites are like any of the others. Common among them, though, is the understanding that bedrooms are for relaxing, not for the unloading of challenging design concepts. Space is ample, even in standard rooms. In the junior suites, you’d hold a cocktail party for 30. Colours are soft but not neutral, with splashes of magnolia, light blue and red offsetting whites and greys. Beds, bedding and furnishings are sumptuous, bathrooms as fine as you’d expect when you’re welcoming Emirate princesses. Beyond the windows are the pool, the gardens and the Med sun. False note? The head-sized slab of meringue served as a welcome bedroom nibble. But we’re really stretching there.

Spread throughout the hotel, these rooms offer views of the garden, pool or village. Each of the rooms is personalized and fully equipped, with an area between 28 and 35 m².

Round the pool, the open-ended bar – a Saint-Tropez hotspot in summer – segues into the “B” restaurant. Here you may eat pretty much whatever you want round the clock, late-night burgers through a buffet breakfast sufficient to the annual needs of an average family. Keynote restaurant, though, is the Rivea beneath lantern-lit trees by the town square. It’s a creation by super-chef Alain Ducasse majoring on Mediterranean simplicity. Look for the taste, not the twiddly plate decoration – in hors-d’oeuvre dishes like bean salad and vitello tonnato, mains like beef in daube. Three-course menu is €68 (£59).

In powder blue and grey, the young staff ensure that, if you’re not Bill Gates, you’re treated as if you were. In few other places have I felt quite so keenly that my appearance made the staff’s happiness complete. Meanwhile, the hotel’s focus of attention is the heated outdoor pool. Somewhere nearby is France’s first Sisley spa, whose Salon Libanais – all 17th-century wooden marquetry and wondrously carved panels – hosted at least part of Mick and Bianca’s wedding night. You’ll maybe need it after a night in the Caves-du-Roy, France’s most celeb-filled night-club. It’s being refreshed for the 50th anniversary, but the keynote psychedelic palm-trees remain.
