The Château de Fonscolombe is classified as a historical monument. It was built in the 18th century in the heart of Provence in the Quattrocento style. It belonged to two large families of humanists, that of Marquis de Saporta and Fonscolombe. Its members are renowned in sciences and weaponry, as evidenced by their friendship with Rabelais, their service with Henri de Navarre, and their correspondence with Darwin. Welcome to cooing doves and canopied beds, sculpted fireplaces and soft heritage colours. Pastel wainscoting meets hand-painted floral wallpaper, subtle chandeliers and wrought-iron balconies. For romance, choose one of the château suites rather than rooms in the wings or stable block. Some of the loveliest views take in the main courtyard and dovecotes. The simplest rooms, set in the former stable block, are still in period style, complete with reclaimed Provençal tiles and timeless shutters. Many rooms have a separate walk-in shower and bath while all have separate loos. The swishest bathrooms boast rolltop tubs, as in the Queen Mother’s Suite, with its Carrara marble bath.

The Orangerie is the cleverly contemporary restaurant space, which adds light and informality to the château, opening it up to the terraces and parkland. In summer, you can dine under the huge 300-year-old bald cypress, so-named as it sheds its leaves in winter. The menus make use of locally sourced lamb, wild boar, cheeses, saffron and olive oil, with dishes washed down with Fonscolombe organic wines. A gourmet dinner might embrace roast monkfish, pan-seared beef or roast sweetbreads in truffle juice. Lunch is bistrot-style, featuring dishes such as scallops, steak and chips or knuckle of lamb. The Sunday brunch even draws the locals to its grilled meats and live music, while the gourmet buffet breakfast features everything from moreish pastries to artisanal jams and regional cheeses.

L'Orangerie and its terraces
New space built in respect of the Castle, the Orangerie is Fonscolombe’s main restaurant. Depending on the season, it welcomes customers passing through, neighbors or residents on its sunny terraces or in its bright room of 120 seats. Entirely homemade, the menu combines simplicity and flavors with seasonal produce from the best regional suppliers and property for vegetables.

Breakfast & brunch
In the morning, a delicious breakfast is served from 7.30 in the dining room on the first floor overlooking the vineyards and gardens. The Château de Fonscolombe’s breakfast is a unique experience: a gourmet menu served in mini-portions, with sweet and savory delicacies accompanied by freshly squeezed juices and coffees and teas of exceptional quality. Every first Sunday of the month, L’Orangerie unveils a new aspect of its cuisine in the form of a fresh and tasty brunch. This will be an opportunity for guests to taste Provencal specialties while admiring the splendor of parks and gardens.

The Pool House
The heated swimming pool of the Park mixes with the pools adorned with fountains and ancient statues which dot the gardens. The poolhouse and its snack service and bar accompany these moments of relaxation.

The bar lounge & The cave Tasting
The bar welcomes anytime guests of the hotel and local clientele, with a nice menu of cocktails and wines to enjoy, including that of the property. Guests at the restaurant and hotel will also be able to privatize the winery bar for tastings or receptions. A confidential place, this tasting bar offers restaurant and hotel guests the possibility of privatization for tastings in the company of the castle sommelier.
The château’s spirit resides in the interconnecting salons, where a billiards room flows into a library, music room, clubby bar and writing room. Opt for a private wine-tasting in the bar or a soaking in the official spa, carved into the stone stables. Far more inviting is the salon-boudoir which is used as a treatment room and was once the preserve of the last Marquise de Saporta, whose portrait graces the room. The grounds, dotted with statuary, reveal a chapel, fountains, vegetable garden and vineyards, with an ancient stone pond turned into a swimming pool. The impressive arboretum was the work of the Marquess Gaston de Saporta, a renowned botanist and friend of Charles Darwin. The fine Atlas cedar was planted by the Queen Mother in 1965 to record her happy stay.

The hotel offers today for children the comfort of the family home, full of surprises, nooks to explore and activities for them to marvel throughout their stay.
