La Table de Levernois
After starting as Chef de Partie by Alain Ducasse at the Hôtel de Paris in Monte Carlo, Philippe Augé continues his climb and climbbed the ladder until his star in 2001 at the Relais & Châteaux Royal Champagne. Since 2008, he took over the reins of the kitchens of the Hostellerie de Levernois and continues to seduce the palate of the gourmands. Particularly attentive to the quality, the Chef favors seasonal products from local producers, sometimes even directly cultivated by Benjamin Forin, our gardener of the vegetable gardens of the homestead.

Bistrot du Bord de l'Eau
The Bistrot du Bord de l’Eau, located in the small town of Levernois and laid out in the old kitchens of the historic building of the Hostellerie dating back to 1750, makes the connection between yesterday and today: double fireplace and exposed stone walls recalls the charm of Burgundy stone. Take a seat at the table for a gourmet moment with friends, family or one-on-one and discover a cuisine highlighting the products of our region in a warm and friendly atmosphere.
Lead by Philippe Augé and Bernard Morillon, the cuisine of the bistro is fresh and reinvented daily on the basis of market products and vegetables from our vegetable garden. It also puts Burgundy on the menu: Snails in sweet garlic broth, eggs in a Chardonnay style or also marbled ham are the best dishes of the Bistrot. In the glasses, Burgundy is never far. By the glass or the bottle, favorites of the sommelier and nice finds are to be discovered without delay.
The cellar offers a selection of 1,000 bottles of the most famous Burgundy wines, including wine tasting.
Nestled in a park of 6 hectares, the Hostellerie de Levernois opens its door to nature. Here the paths wind between the trees, there a wooden bridge crosses the small river Bouzaize, further a stone wall structure the landscape. Between the Louisiana Centennial Cedars and the Black Walnuts of the Americas, the environment gives the envy of a gentle country walk a few kilometers from Beaune. Along the river, ferns and aquatic mint spread their bouquet of scents and colors. The shade of the majestic trees encourages reading or simply dreaming on a bench, while the trails along the vegetables garden and golf invite to walk, on foot or by bike.
Located right in front of the main buiding, the French garden offers a magnificent view from the lounges of our gastronomic restaurant. Hurdles, trimmed shrubs, vegetal tunnels, central fountain and water sets enhance the natural prestige of the House. In the heart of the park, a terrace, with tables, seats and umbrellas offers the happiness of a moment of relaxation or a musical aperitif to the jazzy sound of a piano and a double bass.
Convinced of good food and short circuits, the Hostellerie de Levernois cultivates a colored organic vegetable garden. Tomatoes Green Zebra, Blanche du Canada or Osu, zucchini, pumpkins, carrots, to each vegetable its season ! In addition, a bed of aromatic herbs and a conservatory orchard of about thirty varieties of fruits, apples and pears but also quinces, medlars, nectarines ou almonds, come to the plates of the chef Philippe Augé . Nearby, the hives and the buzzing bees allows to collect the honey of the Hostellerie de Levernois, a 100% local nectar! Besides the pleasure of harvesting his own honey, fruits and vegetables, there is a real desire on the part of the owners to preserve biodiversity and to realize their commitment to sustainable development.
