Having undergone a painstaking seven-year restoration project, Alila Fort Bishangarh, which will open this summer, centres around this beautiful 230 year-old fortress. Located between Jaipur and Delhi, Alila Fort Bisangarh sits off the usual tourist trail but is still within close reach of UNESCO World Heritage Site Amber Fort, just 45-minutes away by car.
The hotel itself encompasses the Fort and the surrounding havelis, sitting perched on a granite hill, alluding regal charm from the moment you arrive. In keeping with its setting, each suite has been tastefully designed drawing inspiration from its past as a warrior fort. Executive chef Nishesh Mani Tripathi’s well-thought-out menus are Indian-based with international influences – think sous-vide watermelon sashimi, duck vindaloo, artichoke ravioli and more. There are several dining options, from a Mediterranean lunch at the haveli, to Amarsar, an airy and atmospheric, tile-encrusted room, which offers dishes inspired by the Silk Route. Madhuveni is superb for a pre-dinner cocktail but the highlight was dining under the stars at Nazaara. Breakfast at Amarsar is a continental spread matched with decent à la carte options, from American-style pancakes with mulberries and whipped cream, to south Indian dosa.
Amarsar
Much acclaimed as an excellent family restaurant in Jaipur, this all-day dining venue serves a unique Thala breakfast, a la carte breakfast, international lunch and dinner menus featuring age-old traditional recipes inspired by the Silk Route, as well as the Alila To Eat in-room dining menu, catering to all palates and age groups.
Nazaara
