ACTIVITIES:
A Capofaro you can immerse yourself in the world of work in the vineyard, from pruning to harvest, as mere observers or participating personally. From a walk through the fi lari, accompanied by the sommelier of the restaurant, to the active work on ancient plants. It’s a tactile experience, a continuous discovery: the guests will learn, for example, that Capofaro not irrigate because you leave the plants alone find the water they need.
The Capofaro aperitif – a reference point for the guests of the island of Salina. Distinctive element is the total immersion in nature and in the landscape: from the restaurant terrace you can enjoy a panoramic view of Stromboli and Panarea. The musical selection studied by our resident DJ is the background.
Nautical excursions can be organized based on the requests of our guests. Daily cruises to Salina or other islands are available, gourmet picnics with a bottle of wine and dishes prepared by our chef, scuba diving or night visits to Stromboli. The whole day is tailored for you, with trusted local skippers and boats of different models.
For guests who want to combine the pleasure of a day at the pool with a dip in the waves, there is the possibility of using the private (pebble) beach with the Locanda for free, equipped from 1 June to 30 September with sunbeds and umbrellas. A shuttle service is available from Capofaro.
Another way to fully enjoy the magic of the sea is to admire the sunset from the enchanting village of Pollara, made famous by the film “Il postino”, the only point on the island from which to observe the sun plunging into the water at nightfall . The chef Ludovico De Vivo and the sommelier of Capofaro prepare for the guests who request it a picnic basket with everything needed for a romantic aperitif.
A transparent sea and high walls of brown rock interrupted by luxuriant vegetation: circumnavigating Salina, by boat or in a gozzo, is a breathtaking experience, which reveals secret corners of the coast and allows you to dive in particularly pristine waters. Salina is located right in the center of the archipelago: by boat or hydrofoil it is possible to organize daily excursions to reach the other islands.
A UNESCO World Heritage site and a nature reserve since 1981, Salina is an island to explore. Trekking along panoramic paths leads to the natural reserve of the Ferns and Leeks Mountains, where you can observe numerous plant species, breathe in the scents of the forest, and see – from the highest point of the Aeolian Islands – the queen’s hawk, shepherds and other pelagic birds , admiring suggestive views ranging from the Sicilian coasts to the Etna volcano.

Capofaro was born from the love for the vineyard and the sea of the Tasca d’Almerita family. A spectacular estate on the island of Salina designed for friends, guests and all travelers of taste, in the name of the best Mediterranean hospitality. Surrounded by 4.5 hectares of vineyards, these real white treasures are softened by terraces with classic Aeolian columns, bougainvillea and shady reeds.
Malvasia- It is the most noble fruit of the Aeolian Islands. Early harvesting it creates dry wines with good acidity, with notes of aromatic and fl oral herbs. Harvested at advanced maturation and with a brief withering it provides excellent sweet wines. Belonging to the group of aromatic vines, Malvasia is mainly widespread on the island of Salina where it was probably brought there by the first Greek colonists between 588 and 577 BC. The Capofaro restaurant is the beginning of a journey into the heart of Sicilian aromas and flavors, respecting tradition and with a calibrated contemporary sensibility. The hotel is located on Tasca d’Almerita’s wine estate on Salina, the greenest of the volcanic Aeolian Islands, right below the magnificent maquis-cloaked slopes of 1,000-metre high Monte Fossa.
Twenty-seven rooms, each different from the other, with a private terrace overlooking the sea or the garden. The dwelling is surrounded by 4.5 hectares of vineyard, among which the historical Amphitheater reigns supreme, absolute protagonist thanks to its colors, its seasons, its living energy. The rooms are divided into 5 types – with the addition of non-category suites 21. Located at the highest point of the estate, it enjoys a unique view, and is the only one equipped with an ancient functioning oven that can be used for private dinners.

Standard Room
Located in the main estate, these rooms measure around 24 sqm and have a private terrace with a garden or sea view. They feature 1 king size or twin beds. Located near the pool and restaurant area, they all have an independent entrance, an en-suite bathroom with shower, a kettle and complimentary wi-fi.

Superior Room

Junior Suite
Located in the main estate, these rooms with an independent entrance measure around 40sqm and have a lounge area, a private terrace and an en-suite bathroom with shower. Suite Exclusive
With the best position inside the estate in terms of view and privacy, these rooms measure 43 sqm and have an independent entrance and a spacious private terrace. Suite 21
The best view available on the estate. This room is completely independent among the vineyards. It measures 35 sqm and includes a lounge area with an additional single bed and a 60 sqm private terrace. The terrace includes an open air shower and a traditional stone oven where in room dinners can be cooked by a private chef. The room features an en-suite bathroom with shower and bathtub, a coffee machine, kettle and complimentary wi-fi.
The restaurant and bar is right by the pool. Buffet breakfasts include fresh fruit, local ricotta and homemade cakes, pastries and breads. Eggs are cooked to order – with bacon from the Nebrodi mountains or sunny side up with tuna bottarga – while à la carte choices include cured fish and meat plates, Sicilian granita, porridge, pancakes or omelettes. Chef Ludovico de Vivo applies eclectic creativity to both Sicilian and international traditions, with a fierce loyalty to local produce (including home-grown vegetables and salads from a garden above the pool, and Tasca d’Almerita’s own olive oil). There are three tasting menus (one traditional, one fusion, one vegetarian) that can be paired with Tasca d’Almerita wines, as well as à la carte.

Restaurant
An ambitious chef from the South of Italy, Ludovico De Vivo’s food combines the Tasca d’Almerita passion for good food, rooted in a rich and profound gastronomic history, that brings together lessons of the ‘monsu’ (the chefs of the Sicilian and Neapolitan aristocratic homes) with peasant knowledge from historical Sicilian feudal estates. Inspired by the concept of ‘zero kilometer’ cooking, our local vegetable gardens provide 70% of the produce used in the kitchen. The wheat for the bread* (made with sourdough starter) and pasta is grown in the Tasca family home, Regaleali, as are the olives for the extra virgin olive oil. Waste is reduced to a minimum, and whatever little is left is transformed into compost for the grapevines. *Our bread was voted ‘best bread on the table in Italy’ by the Gambero Rosso Restaurant Guide 2018.
The wine ecosystem
Immersion in an ecosystem linked to wine is the basis of menus where dishes interact with the labels and the Tasca d’Almerita estates. Tasca d’Almerita has been cultivating the land with passion for eight generations. Today in Sicily he takes care of five estates, in as many territories: in addition to the historical one of Regaleali, Tascante sull’Etna, Whitaker a Mozia, Sallier de La Tour in Camporeale and Capofaro in Salina.The love for wine is combined with that for wine hospitality and Capofaro is the emblem of this vocation.

The Chef
Ludovico De Vivo loves to share the story of Sicilian cuisine with the Locanda’s guests and for this reason, for those who wish, he organizes cooking lessons, accompanying guests on a journey that starts from the gardens of Capofaro. An opportunity to learn traditional recipes in a modern guise, exchange ideas and have fun with the cuisine of Capofaro. At the end of the course there will be a tasting of everything that has been prepared together accompanied by a glass of dried Malvasia. Booking of your course through the reception is required.
Service style is crisp, efficient and never invasive or over-personal. Boat trips are captained by an archaeological diver who uses submarine drones to reveal ancient shipwrecks and cargoes on the sea-bed, and guided treks are conducted by passionate experts – a highlight is climbing the active volcano of Stromboli in the evening to watch its nightly pyrotechnics. Wine tastings and cooking classes can be arranged, and in the shoulder seasons there are cooking, yoga and Pilates retreats.
