Forged from the 16th-century farm buildings, the Bougainvillea Bar and Carosello Restaurant are splendid spaces, with their vast arched windows, cross-vaults and stone fireplaces. Most of the season, though, guests sip and sup al fresco on shady terraces. Sicilian showman Carmelo Padellaro entertains at the piano bar, or you can contemplate the sunset over an Aperol Spritz down at the pool bar (which also does pizzas and light lunches). At the hotel’s main restaurant, Il Carosello, local chef Luigi Barletta draws inspiration from Puglian traditions: unfussy fare emphasising fresh, seasonal and local ingredients. Seafood is the main protagonist – lobster, octopus, prawns, Taranto mussels – or you can choose how the catch of the day is cooked (Mediterranean style with tomatoes, or simply grilled?). Portions are generous; you won’t go hungry.

Carosello
Set in the former stables of the Masseria, Carosello’s high, whitewashed ceilings, rustic pews and garden views combine for an elegant, authentic ambience. Named after a vegetable native to Puglia, this new destination restaurant offers traditional dishes that create new emotions, making use of the finest local produce. Interpreted with ancient techniques and savoir-faire, the menu is crafted by Chef Luigi Barletta and his team under the direction of Director of Food Fulvio Pierangelini. It includes handmade pastas, wild herbs and vegetables, beautiful fresh fish and local cheeses and meat.

Pool Bar
Framed by foliage and reflecting in the glistening cerulean waters, the Pool Bar’s refreshing drinks and snacks are served in a relaxed, laid-back atmosphere. An oasis of shade in the midday sun, the bar’s cool cocktails, crisp local wines and fruity smoothies perfectly accompany a light lunch menu. There is a tempting range of salads that reveal the perfumes and flavours of the region. Fragrant Pizzette go straight from the wooden oven to your plates, sandwiches and handmade pastas are prepared with ingredients from the Masseria’s garden. Under the whitewashed arches of what was once the Masseria’s 16th-century barn, find our serene, spacious bar, reimagined by Olga Polizzi.
