Norcia, the town of St. Benedict, nestling in the National Park of the Sibillini Mountains, is the Italian capital of the black truffle. The Palazzo Seneca tells the story of this region from the 16th century onwards, and the Bianconi family can look back on a glorious, more than 160 year-old tradition of hospitality. The best Umbrian artisans worked on the detailed refurbishing of the property and used unique materials and decorative objects to create perfect harmony between colours and lights, tradition and design. The hotel has just 24 rooms, all of which share the soothing earth tones and natural materials of the hotel’s overall style and are furnished with a mix of artisan and antique pieces: beds are carved wood or wrought iron; desks are modern leather or antique wood; floors are terracotta or parquet. As in many historic residences, each room is laid out differently, and some offer walk-in closets, outdoor balconies or inviting leather chairs. Top-of-the line Simmons spring and memory foam mattresses, a selection of pillow types, and fine Italian linen sheets make for a restful sleep, aided by the perfectly soundproofed rooms. The spacious black or ecru marble bathrooms have combined rainshower and hand-held shower heads, and natural bath and body products.

The Vespasia restaurant’s Michelin star was confirmed in 2017 under executive chef Valentino Palmisano, a Naples native who spent almost a decade working in some of the most prestigious hotel restaurants across Asia. The fixed menus are both innovative and deeply rooted in Norcia’s local cuisine, with deft flourishes hinting at Palmisano’s Neapolitan history and Asian experience. His signature dish? Spaghetti al pomodoro, a deceptively simple classic that took the chef took six months to perfect. A continental buffet breakfast is served each morning in a barn-cum-breakfast room, lined with picture windows overlooking the countryside and opening onto the garden for alfresco dining. The spread is memorable, featuring freshly baked cakes and tortes, artisan honey and jams, a selection of Norcia’s famous charcuterie and cheeses among the selection – staff can also whip up a custom omelette.

Vespasia’s philosophy is built on the principles of “Salus Per Cibum”. The aim of this movement is to put the human being, the local community, a quality healthy nutrition, respect for the environment and the animals in the center of development. It means enhancing the best local producers who work according to a serious scientific discipline, then spread the culture of good and healthy among the local population and consumers. Vespasia restaurant collaborates with virtuous producers Salus Per Cibum to grow together. The project Salus Per Cibum organizes cultural encounters with kids and their parents in schools, promotes cooking lessons and visits to “Salus Per Cibum” active companies. “Salus per Cibum” is a movement without borders, open to those who share a vision of a “healthy” future”.

Spa
In the basement of the Palazzo Seneca Relais & Châteaux, just a few meters from the main square in Norcia, a mystic silence surrounds the rooms of the Wellness Centre. Cross-vaulted ceilings and ancient stone floors are the perfect frame for your peace. The intimacy of the Sala Sibilla is reserved for couples, with massage beds and a design hot tub with chromo-therapy in which to relax and experience romantic moments. The relaxation area will enthral you with its large mats and the central column from where the vaults that characterize the spa start out. This is the place where, after a rejuvenating massage, you can sip herbal teas and infusions prepared with herbs from the Sibillini National Park.
In the humid area, on the other hand, you can find a stone hot tub that fits six while, in the adjacent room, a Turkish bath and a sauna are ready to purify your skin. All these intimate environments, together with the changing area, complete an environment tailored to the well-being of our guests.
