More than 30 years ago I took the grand challenge to continue the century and half family work to produce high quality wines using both local and international grapes variety. Being the third generation of winemakers,I passed my love and passion for the territory to my son Benedetto who, along with one of the most famous Tuscan enologist,Stefano Chioccioli, is now in charge for the wine making process, maintenance,innovations and modernization of the vineyards and cellar.Join Benedetto and me for a walk through the story of Il Falconiere and our vineyards; visit our cellar and our “ bollicineria” a jewel that keeps jealously my unique Metodo Classico Signature tastings for serious wine collectors.

Passion for my land, its incredible richness in product, the deep culinary Tuscan tradition, an easy approach and a cozy typical local kitchen decreed the success of my Cooking Under the Tuscan sun courses. You will learn to cook authentic Tuscan cuisine in focused, spirited classes in our residential style kitchen, using local ingredients personally selected by me and my brother/ Chef Richard Titi , following strict criteria of health and ethic use of the land. Following your cooking class you will enjoy a seated, served lunch or dinner in our charming dining room, enjoying the food you have prepared. My cooking school offers you one day cooking class, cooking vacations and fun!

The Relais & Chateaux Il Falconiere & Spa, is proud to be celebrating 30 years of heritage, passion, service, hospitality and memorable moments since first opening its doors in 1989. For the Baracchi family inhabiting this three hundred year old villa, welcoming guests with typical Tuscan warmth and sharing their passion for the region is a true vocation. In their cuisine, fresh products are drizzled with oil from the estate’s olive trees, and the wine comes from vines grown in line with biodynamic principles. Other regional products, such as the Chianina beef, are chosen with care. Developing local synergies is natural here, as is the concept of a circular economy: food waste is strictly monitored and also shared with the estate’s chickens!
Il Falconiere & Spa is the story of a Tuscan family, it’s a dream and today, along with its fine dining restaurant and an exclusive Spa, it’s a small world of charm suspended in time. Say buongiorno to the hundreds little birds who join you during our delicious breakfast in the terrace, ready to enjoy an horse riding through roman paths crossing the hill. Guests are invited to choose their own corner of their heart. The rooms in the old villa, which preserve the intimacy of a stay in the main house, the little chapel to those adjacent or very close to the Spa.
