The founders of Split Apple are Lee Nelson, a retired doctor who specialises in making people look – and feel – as good as they can, through thoughtful food, expert nutrition and relaxation.

The Asian-inspired vibe is continued in the three suites – Lotus, Rainbow and Fuji, with their minimalist interiors and use of natural materials. The spacious rooms are all extended by private decking, with those sparkling sea views also visible from inside through large sliding glass doors.The Eastern theme is similar throughout but the layout and bathrooms change and each room has a distinctive feature. American cherry-wood panelling stretches across the wall of the Fuji suite; a Japanese granite bath can be found in Lotus, while the aptly named Rainbow suite boasts a rainbow-coloured therapy shower and bathtub with LED lights. The artwork adorning the walls has been carefully selected by Lee, which adds to the sophisticated feel of the bedrooms. In the evening, a natural scent is released from a bedside gadget to aid sleep.

The large two level oceanfront room has a separate lounge and king size bed. The sofa in the lounge can be converted to an extra bed. Room facilities include a western style bath tub with LED lights that control the water color in bath and shower. 42 inch motorized LCD television with Apple TV and internet radio, motorized blinds, speakers throughout, two private decks, iPod port, as well as wireless internet access and telephone.

Chef Pen is a mastermind in the kitchen. The Asian-Mediterranean fusion food packs a real punch, both in taste and nutrition. Enjoy dishes full of vegetables and ingredients with a low glycemic index, said to regulate blood sugar. Pen’s cooking deserves top marks; the rich flavours and clever taste collaborations are restaurant quality but it lacks any of the bad stuff. The evening five-course tasting menu changes daily and can be altered depending on allergies, intolerances, dietary requirement or guest requests.It’s often soup to start, such as Tom Yang Kung, a spicy Thai prawn soup served in a fresh coconut, which could be followed by succulent sauteed aubergine with avocado. Fish features heavily in Pen’s cooking, including fresh snapper or white warehou, a flaky local fish. My favourite dish was a delectable dark chocolate mousse which I was incredulous to discover was made without sugar, dairy or gluten.
